Apple Layer Cake

Makes 20 servings


Cooking time: 60 min
 
Equipment
1 tray size 20x30cm
 
Ingredients
2kg Bromley apples
276g quality plain flour
230g fine wheat semolina
346g caster sugar
136g butter
1tsp baking powder
½ tsp cinnamon
 
Method
1.  Peel the apples and grate them on cheese grater using the coarse side.
2.  Mix all the dry ingredients (flour, semolina, sugar, baking powder, cinnamon) in large bowl until a dough is formed.
3.  Preheat the oven at 180°C (360°F) or gas mark 4.
4.  Divide the pastry into 5 parts. Roll out each part into 5 tray-size layers.
5.  Put the first layer on the tray and follow with second layer of grated apples. Repeat the process 3 times and finish       with the last layer of pastry.
6. Sprinkle the top layer with pieces of butter. This will make the cake crispy when baked.  
7. Bake in the oven for 40 min until golden.
 
Presentation
Decorate the baked cake with icing sugar and berries of your choice.
