Bara Brith

Ingredients
1lb mixed fruit
1/2 pt tea (strong) – ‘Welsh Brew’
2 tablespoons marmalade  - ‘Celtic woodman marmalade’
6 tablespoons dark brown sugar
1lb self-raising flour – ‘Bacheldre’
1 free range egg
Honey to glaze – ‘Hill top honey’
 
Method
  1. Place the fruit, sugar, marmalade, spice and sugar in a bowl.
  2. Pour the hot tea over it
  3. Allow to soak overnight
  4. Mix in the egg and flour
  5. Divide into 1lb loaf tins
  6. Bake for 45-60 mins on 180
  7. Remove from the oven and immediately glaze with honey
  8. Allow to cool
  9. Serve with Bodnant Welsh Foods very own butter (cheese is a traditional accompaniment)
