Chocolate Beetroot Cake

Ingredients
1 oz cocoa powder
4 oz plain flour
1 1/2 tsp baking powder
Pinch salt
5 oz caster sugar
9 floz rapeseed oil
1 tsp vanilla extract
3 free range eggs, beaten
7 oz plain cooked beetroot, grated
5 oz plain dark chocolate, chopped
 
Method
  1. Mix together the flour, baking powder, salt and sugar.
  2. Add the rest of the ingredients and mix well.
  3. Pour into 7 inch round cake tin and bake for 1 hour at Gas mark 5 (190c).
  4. Leave in tin for 10 minutes, turn out and dust with icing sugar.
 
This cake is moist and fudgy in the middle and lovely served with chocolate sauce or crème fraiche
