Chocolate Brownie

250g caster sugar
210g quality dark chocolate
165g plain flour
120g unsalted soft butter
2 eggs
1 egg yolk
1 teaspoon instant coffee
1 teaspoon baking powder
1/4 teaspoon salt
Icing sugar for dusting
1. Set the chocolate over simmering water and melt
2. Cream butter and sugar until pale, add eggs a little at a time
3. Melt the coffee in a little boiled water
4. Sift the flour, salt and baking powder and add to the chocolate,
5. Pour into a baking tin and bake for 25-30 mins at 180c
6. Leave to cool in the tin before cutting into squares and dusting with icing sugar as desired
