Nice ā€˜nā€™ Spice Cupcake

This recipe will make a baker’s dozen [13] cupcakes.
120g butter
120g brown sugar
115g whole egg (preferably free range)
210g strong flour
10g baking powder
360g mincemeat (we make our own but if you can source a good quality one this will suffice)
1. Cream softened butter and brown sugar until light and fluffy.
2. Add roughly one quarter of the whole egg and mix until incorporated.
3. Repeat stage 2 three times until all the egg is added.
4. Sift together the strong flour and the baking powder. Add this to the butter, sugar and egg mixing until clear.
5. Stir in the mincemeat until evenly distributed.
6. Prepare a baking tin with 13 cupcake paper cases.
7. Weigh 70g of the mixture into each paper case until you have 13.
8. Bake at 200C (no fan) for around 20 minutes or 'springy' to the touch.
