Pistachio Cake
By Royal Crescent, The

Ingredients
200g ground pistachios
3 whole eggs
200g castor sugar
100g          melted clarified butter
100g          self raising flour
135g          olive oil
½ zest and juice of 1 orange
 
Method
  1. Blitz pistachios in blender
  2. Whisk eggs and sugar until light and fluffy
  3. Sieve flour and mix with pistachios
  4. Mix butter and olive oil together then fold into eggs and sugar mix
  5. Fold in pistachios, flour, juice and zest
  6. Pour into 18cm x 28cm tin
  7. Bake for 25-30mins at 170C
