Rock 'n' Roll Bourbon & Cola Cupcakes

Makes 12 cupcakes

Cooking time: 45 minutes

Equipment
12 muffin tins
12 cupcake cases
Large star-shaped icing nozzle or palette knife

Cakes

240g plain flour
220g caster sugar
30g cocoa powder
1 tsp bicarbonate of soda
1/2 tsp salt
200ml hot water
100ml vegetable oil
1 tbsp white distilled vinegar
1 1/2 tsp vanilla extract
60ml bourbon, and a swig for the cook

1. Mix dry ingredients together in a large bowl.
2. Whisk wet ingredients together in a separate bowl.
3. Pour wet mix into dry mix and whisk until smooth.
4. Line 12 muffin tins with cupcake cases and divide mixture between them.
5. Bake at 180°C (160°C fan oven or gas mark 6) for 20-25 mins, until springy or a skewer comes out clean.

Buttercream
80g slightly salted butter
250g icing sugar
25ml bourbon, and another swig for the cook

1. Soften butter and beat in a mixer.
2. Add half the icing sugar and beat.
3. Add half the liquid and beat.
4. Add remaining icing sugar and beat.
5. Add remaining liquid and beat.
6. Pipe onto cupcakes in swirls with a large star nozzle, or spoon on and tidy up with a palette knife. Decorate with fizzy cola bottle sweets.

Enjoy with a glass of bourbon & coke and some Guns 'n' Roses!

Variation: If you use a vegan margarine, these cakes are suitable for vegans.
