Tricia’s Wartime Cake

6oz self-raising flour
3oz margarine
3oz caster sugar
¼ pint milk         
1 tbs vinegar
½ tsp bicarb of soda
3-4oz mixed dried fruit
½ tsp mixed spices
  1. Preheat oven to 180C
  2. Sift the flour
  3. Pour the milk into a basin
  4. Add vinegar and bicarb of soda
  5. The mixture will froth up slightly
  6. Cream margarine and sugar
  7. Add 1/3 of flour and then 1/3 vinegar mixture
  8. Keep adding flour and vinegar alternately.
  9. Add mixed spices
  10. When fully blended add fruit
  11. Pour into a greased and lined 1lb loaf tin
  12. Bake for approximately 1hr
