Chocolate Guinness Cake

Makes 2 10.5 inch Guinness cakes 
440ml Guinness
60ml water
500g butter
800g caster sugar
150g cocoa powder
300ml double cream
4 eggs
1 tsp vanilla essence
550g plain flour 
3tsp bicarbonate soda 
500g cream cheese 
  1. Melt butter, Guinness and water.
  2. Whisk in sugar and cocoa powder.
  3. In a separate bowl, whisk eggs, cram and vanilla essence.
  4. Whisk this mixture into the Guinness mixture.
  5. Finally, whisk in the flour and bicarbonate of soda.
  6. Spoon the mixture into two 10.5 inch loose bottomed cake tins.
  7. Bake at 150 degree for 1 hour. 
  8. Allow to cool and top your cakes with whipped cream cheese sweetened with icing sugar.
