Gluten-free Chocolate Brownie

Serves 6 to 8
160g plain chocolate
100g butter
100g ground almonds
175g caster sugar
½ tsp vanilla extract
4 eggs (separated)
  1. Preheat the oven to 180°C.
  2. Line a 9 inch square baking tray, or equivalent of.
  3. Melt the plain chocolate with the butter (this can be done in the microwave – but heat for 30 seconds at a time to ensure the chocolate does not burn!).
  4. Stir in the ground almonds, caster sugar and vanilla extract.
  5. Beat the egg yolks until pale and stir through the chocolate mixture.
  6. Whisk the egg whites until stiff peaks are formed.  
  7. Fold the egg whites through the chocolate mixture a spoonful at a time – it is important to keep as much air in the mixture as possible.
  8. Pour into prepared baking tray.
  9. Bake for 45 minutes or until firm to press and top cracking.
  10. Best served warm with clotted cream or ice cream.
