Madeleine au Thé Matcha (Green Tea Madeleines)

Makes 12 Madeleines
10 minutes (the day before)
10 mins on the day
cooking time 8 mins
90g Flour
10g Matcha (Japanese green tea in powder)
3g Baking Powder
100g butter
2 large eggs
120g Caster sugar
  1. Sieve the flour and baking powder together into a bowl with the matcha.  Melt the butter.
  2. Whip the eggs with the sugar for about 5 minutes and fold in the flour.
  3. Mix in the melted butter until the mixture is completely smooth and incorporated.
  4. Store in the fridge until the next day.
  5. Day two: preheat the oven to 240C and butter the madeleine tray.
  6. Fill the molds up to ¾ and place in the oven. Immediately reduce the temperature to 220C and bake for 7 to 8 mins.
  7. Remove the tray from the oven and leave to cool slightly before turning the madeleines out on to a cooling rack.
